Last week was amazingly simple keeping to the planned menu. Especially since most of it was already assembled and in the freezer. We did veer off for the weekend though since I was gone ALL DAY Saturday with Kat's drama team, Committed, and the band Gate29 to Collinsville, Alabama for the Hydrate 08 tour. (Hubby and OS ate leftovers for lunch and tuna sandwiches for dinner on Saturday, and hubby grilled hamburgers on Sunday leaving the cheeseburger pie for another day.)
This week I'm still working with hamburger meat and a very limited grocery budget.

WEDNESDAY: Zucchini Hamburger Veggie Casserole
THURSDAY: Spinach Beef Bake
FRIDAY: Eggplant & Beef Potluck Casserole
SATURDAY: ??
SUNDAY: ??
As of right now, the weekend is up in the air since Kat will be gone White Water Rafting with the drama team Saturday.
